Curry Sauce
Ingredients:
1/4 cup Onion, diced
2 tsp Ginger, minced
2 tsp Garlic, minced
1 tsp Jalapeno, minced
1 TBS Garam masala
1 TBS Curry powder
1 TBS Smoked paprika
1/4 tsp Cardamom, ground
2 cup Fire Roasted Tomatoes (canned works great!)
1/2 tsp Salt
16 oz Coconut milk
water (as needed)
1-2 TBS Oil/ Coconut Oil
Method:
1. Add oil to pot- saute onion, garlic, ginger, jalapeƱo on medium heat until softened
2. Add spices, toast until very fragrant
3. Add tomato, cook 3 mins
4. Add coconut milk, cover pot and simmer 25 mins until thickened
5. Cool slightly and add to blender- blend until smooth!
